INGREDIENTS
- Dry ingredients
- 2 cups almond flour
- 2/3 cup oat flour
- 1/2 cup Great Lakes Collagen Hydrolysate
- 1/4 cup tapioca flour
- 2 tsp cinnamon
- ½ tsp nutmeg
- 1 ½ tsp baking powder
- ¼ tsp baking soda
- ½ tsp salt Wet ingredients
- 1 cup mashed banana (about 2-3 very ripe bananas)
- ¾ cup coconut sugar
- ¼ cup coconut oil, melted and cooled
- 4 eggs
- 1 tsp vanilla
DIRECTIONS
- Heat oven to 350 degrees and prepare a loaf pan by lining with parchment paper or greasing with additional oil.
- In a large bowl add all the dry ingredients and whisk together well until thoroughly blended and no lumps of flour remain.
- In the bowl of a stand mixer, or in a large bowl if mixing by hand, beat together all the wet ingredients until light and bubbly.
- Add in all the dry ingredients to the wet mixture and stir until just combined. Scraping down the sides of the bowl if necessary.
- Pour the batter out into the prepared loaf pan and using a rubber spatula spread the batter out to create an even layer.
- Bake in the oven for 58 minutes to 1 hour or until a toothpick pierced into the center of the loaf comes out cleanly.
- Remove from oven and let rest in loaf pan for at least 10-15 minutes before transferring to a wire rack to cool completely. Then slice and enjoy!
