Collagen Chocolate Chip Snack Cake

Everyone loves chocolate chips! What’s even better? Enjoying them without the guilt! This snack cake is simply delicious, and you won’t believe it’s made with alternative flours and sugars, plus the collagen adds protein to every bite. What’s not to love? INGREDIENTS

    Dry Ingredients
  • 1 ½ cup almond flour
  • ½ cup Great Lakes Vanilla Collagen Powder
  • ½ cup tapioca flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup + 2 tbsp chocolate chips
  • Wet Ingredients
  • 3/4 cup coconut sugar
  • 4 eggs
  • ¼ cup coconut oil, melted and cooled
  • 2 tsp vanilla

DIRECTIONS

  • Heat oven to 350 degrees and prepare loaf pan by greasing with additional oil or lining with parchment paper.
  • In a medium bowl mix together all dry ingredients (except chocolate chips) until well combined.
  • In a large bowl mix together all the wet ingredients until light and frothy.
  • Add the dry to the wet ingredients and stir until just well mixed.
  • Stir in ½ cup chocolate chips into the batter and pour into prepared loaf pan.
  • Top with additional 2 tbsp of chocolate chips and bake for 48-50 minutes or until loaf is golden brown and a toothpick comes out clean when poked in the center.
